It never occurred to me that chicken should be a seasonal ingredient until we started getting all of our meat from @pasturesongfarm.
If there’s no grass, Clara and Jeremy aren’t raising birds. It’s made chicken a more special ingredient to cook with and I like knowing that the birds we get were raised foraging on living, growing stuff.

Clara moves the birds almost every day during the growing season. You should see how green the grass grows back where the chicken house has been. The soil gets richer, the plants grow stronger, the chickens eat better, and the food on my plate feels whole.
Birds aren’t usually raised like this. Seek out real, pasture raised birds and pay their farmers accordingly! They work hard to deliver the goodness. Check out eatwild.org to find pastured meat near you.
